inThis is one for after a workout or a vigorous yoga practice. Consider it as a FULL snack and not just a quick treat before your meal.
Taken from my Oxygen magazine Spring 2009.
1 cup NATURAL peanut butter (mine is just made from … wait for it … peanuts and NOTHING else)
1 cup honey
1 cup old-fashioned oatmeal
1 cup chopped dried apricots
1/2 cup walnuts
1/2 cup almonds
1. Combine peanut butter and honey in a large nonstick pot and heat on low until runny. Mix in the oatmeal, apricots and nuts stirring until all ingredients are well coated.
2. Line a 9×9-inch pan with waxed paper (I use the pyrex bowl so no paper needed). Press the mixture into the pan. Let cool, then cut into 16 bars.
I just love these bars which are made so quick and easily even a child could do it (minus the heating up). The only problem is that I have to make sure not to need more than 1 a day 😉.
